My Kitchen, My Haven, My Space

As a homemaker and the queen of the kitchen, I always make sure that I serve the best for my family. I make sure too that the kitchen, my haven, is a place where I can have experiment on different food ingredients and turn them into delicious and healthy dishes for the household. I am glad that I have a pantry always stocked with ingredients so that every time I want to create or cook something, I can easily whip up a dish in no time at all.

One of the many Filipino snack I miss so much is banana cue. The banana is similar to a plantain only this is golden brown when it is ripe. It is cook wit brown sugar on a hot oil. Then, place it on a skewer. I you are lazy to make some, just buy it already made. It is sold in the streets that is why we call this a "street food".

One of our favorite place to visit in Dallas is the Dallas Zoo. So, we think that a visit to the San Antonio Zoo should be included on our plan when we go to San Antonio. No! Not a Cake for His Birthday

My son's eight birthday is fast approaching. In three weeks time he'll be celebrating his birthday and two days after that, he is going to get baptized in our church (The Church of Jesus Christ of Latter Day Saints). We are all excited for his baptism! This year, we decided to make his birthday celebration an only "family affair." We would just take him to his fave restaurant, give him a new bike (as gift), and take him to a waterpark (WetZone) in Rockwall. I am sure he would have a blast! For now, he still want to have a birthday party, will all his fave foods, friends, and of course....gifts from his friends. I feel sad for him, but we need to be frugal in order to save our money for some important things.



Anyway, talking back on his birthday, he doesn't want me to bake him a cake nor brownie. Instead, he wants me to make him a fruit cobbler! I don't mind fruit cobbler, for it s yummy and also healthy. Today, I made him a blueberry cobbler and oh boy! He gobbled it! He almost finished the whole plate! And while eating it, he couldn't stop saying 'how good it was!" So glad he saved some for Daddy's dessert tomorrow, lol.

FTF: My Quick Chicken Adobo

I happened to have boiled chicken, so what I did was, sauteed it in oil, minced garlic, soy sauce, vinegar, brown sugar, bay leaves and a little bit of chili sauce. I waited till the sauce is almost gone, then it is ready. There are many style of how Pinoys cook adobo. Sometimes, you can just mix all the ingredients, then boil them until the meat is tender; if you want it dry or with a little sauce, it's up to you.

Though it was new to them, they ate the Biko and Allison actually loves it. The importance of reading is one of the things we want to impress upon our son's mind. It teaches you almost everything you want to know in this life. I used to read a lot when I was young. Mostly, I read English magazines and books. It help me learn to speak English and write as well. Anyway, we have been doing these two things s far. Husband and I noticed that our son sometimes misread and skip some words when he reads. We couldn't figure out why. A prescription  for eyeglasses is what we need to get him an eyeglasses.

No wonder why wouldn't go back to our eye doctor for the doctor would ask him to get a new one since it's been years since he got his eyeglasses and it really need to upgrade it.

Perfect Breakfast Snack for Hubby

Working on a graveyard shift is one of my husband's most hated job schedule in his life. He has been working night shift now for three years and still hasn't gotten use to it. Anyway, during his shift, sometimes he gets hungry, and so he eats some snacks, but most of the time unhealthy snacks. That's one of the reasons why he gained a lot of weight. So,  I told him to eat fruits and veggies for snacks instead of junk foods.  He said that sometimes, he gets bored with those foods. too! My Healthy Meal

Okay, I am trying to lose weight and be healthy again. To do that, I need to change my lifestyle particularly. Eat a healthy meal, and exercise. So, I try to walk everyday for at least 45 minutes to an hour. I also eat more fruits and vegetables, meat and fish and very little carbs. As you can see on the picture, my plate has more veggies than rice. I also have a small fish.


Watching carefully what I put in my mouth helps me lose weight. Exercise is a big factor, too. I am glad that for the past 6 six now, I already lost 7 pounds. I feel great already. Anyway, the foods on my plate were, fried fish, fresh salsa. stir fry bean sprout, and sauteed squash and Asian long beans. Oh they are all so yummy, indeed :-).

Carpet Cleaning Services

Every time my in-laws visit us, I feel a lot of stress coming. One thing for sure that makes me feel this way is that I have to clean the whole house upside down. My father in-law is very meticulous when it comes to dust. One time he commented on how dusty our ceiling fan was. Since then, husband and I made sure that we clean everything in and outside our house before they got here otherwise he would say something about it. On top of dust, I vacuumed the floors and cleaned the stain on it. It feels good to see the house clean and neat and in order.

Talking about carpet cleaning, I wished there is a company here in Dallas like the round rock tx carpet cleaner. I heard they are very good when it comes to carpet cleaner services. I will definitely call them, so I don't need to do the carpet cleaning myself because this is not an easy job for me. Husband can do this job, but he is very busy at work and even during his day off. For now, I'll do the cleaning myself.

Leche Flan

My favorite Filipino style flan or shall we call it 'leche flan' in Tagalog. This yummy and creamy dessert is very famous during special occasions such as Christmas and New Year. I so love it. You should try it because it taste so much better than the custard pudding than Mexican style.

Ingredients:

  • 10 pieces raw eggs
  • 1 small can condensed milk
  • 1 cup fresh milk (or evaporated milk)
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
Directios:
  1. Using all the eggs, separate the yolk from the egg white (only egg yolks will be used).
  2. Place the egg yolks in a big bowl then beat them using a fork or an egg beater
  3. Add the condensed milk and mix thoroughly
  4. Pour-in the fresh milk and mix well
  5. Put the mold (llanera) on top of the stove and heat using low fire
  6. Put-in the granulated sugar on the mold and mix thoroughly until the solid sugar turns into liquid (caramel) having a light brown color
  7. Spread the caramel (liquid sugar) evenly on the flat side of the mold
  8. Wait for 5 minutes then pour the egg yolk and milk mixture on the mold
  9. Cover the top of the mold using an Aluminum foil
  10. Steam the mold with egg and milk mixture for 30 to 35 minutes.
  11. After steaming, let the temperature cool down then refrigerate
  12. Serve for dessert. Share and Enjoy!

Chicken Cacciatore

One day when I was looking for a new recipe for chicken I stumbled at an Italian recipe. So I tried it to see if it is really good as the owner of this recipe says. It turned out to be good and it was a hit in my house the first time I made it. So, when we are craving for this dish, I just make some. I serve it with either steamed rice or corn bread.


Ingredients:
  • 4 chicken thighs
  • 2 chicken breasts with skin and backbone, halved crosswise
  • 2 teaspoons salt, plus more to taste
  • 1 teaspoon freshly ground black pepper, plus more to taste
  • 1/2 cup all purpose flour, for dredging
  • 3 tablespoons olive oil
  • 1 large red bell pepper, chopped
  • 1 onion, chopped
  • 3 garlic cloves, finely chopped
  • 3/4 cup dry white wine
  • 1 ( 28-ounce) can diced tomatoes with juice
  • 3/4 cup reduced-sodium chicken broth
  • 3 tablespoons drained capers
  • 1 1/2 teaspoons dried oregano leaves
  • 1/4 cup coarsely chopped fresh basil leaves

Directions:

Sprinkle the chicken pieces with 1 teaspoon of each salt and pepper. Dredge the chicken pieces in the flour to coat lightly.
In a large heavy saute pan, heat the oil over a medium-high flame. Add the chicken pieces to the pan and saute just until brown, about 5 minutes per side. If all the chicken does not fit in the pan, saute it in 2 batches. Transfer the chicken to a plate and set aside. Add the bell pepper, onion and garlic to the same pan and saute over medium heat until the onion is tender, about 5 minutes. Season with salt and pepper. Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes with their juice, broth, capers and oregano. Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over medium-low heat until the chicken is just cooked through, about 30 minutes for the breast pieces, and 20 minutes for the thighs.
Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slightly, about 3 minutes. Spoon off any excess fat from atop the sauce. Spoon the sauce over the chicken, then sprinkle with the basil and serve.

Chowking Braised Beef

A Filipino dish I love so much. Braised beef Chowking style and it is oh so good! It is serve in  fastfood chain called "Chowking". You should tr it because i is really good. It taste exactly as the one they serve at that restaurant. During my visit of my in-laws here this week, I made this for our dinner serve with corn bread. They love it. My mother in laws even asked for a recipe.

Ingredients:
1/2 kg beef brisket
4 cups of water, add more if needed and 1/4 cup for cornstarch
2 tbsp Kikoman soy sauce
2 tbsp soy sauce
2 star anise
2 tbsp onion, minced

1-2 tbsp sugar
1 tsp cornstarch
ground pepper to taste
1 carrot, cut diagonally 
spring onions to garnish

Procedure:
1. In a saucepan, combine all the ingredients except the carrots and the spring onions. Boil the beef until tender.
2. Add the carrots.
3. Dilute the cornstarch to 1/4 cup water and add to the beef to thicken the sauce.
4. Put on top of a steamy rice and garnish with spring onions.

Bufallo Wings (baked)

Ingredients:

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 20 chicken wings
  • 1/2 cup melted butter
  • 1/2 cup hot pepper sauce (such as Frank's RedHot®)

Directions:

  1. Line a baking sheet with aluminum foil, and lightly grease with cooking spray. Place the flour, cayenne pepper, garlic powder, and salt into a resealable plastic bag, and shake to mix. Add the chicken wings, seal, and toss until well coated with the flour mixture. Place the wings onto the prepared baking sheet, and place into the refrigerator. Refrigerate at least 1 hour.
  2. Preheat oven to 400 degrees F (200 degrees C).
  3. Whisk together the melted butter and hot sauce in a small bowl. Dip the wings into the butter mixture, and place back on the baking sheet. Bake in the preheated oven until the chicken is no longer pink in the center, and crispy on the outside, about 45 minutes. Turn the wings over halfway during cooking so they cook evenly.

Hawaiian Banana Nut Bread

Ingredients:
  • 3 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups white sugar
  • 1 teaspoon ground cinnamon
  • 1 cup chopped walnuts
  • 3 eggs, beaten
  • 1 cup vegetable oil
  • 2 cups mashed very ripe banana
  • 1 (8 ounce) can crushed pineapple, drained
  • 2 teaspoons vanilla extract
  • 1 cup flaked coconut
  • 1 cup maraschino cherries, diced

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pans.
  2. In a large mixing bowl, combine the flour, salt, baking soda, sugar and cinnamon. Add the walnuts, eggs, oil, banana, pineapple, vanilla, coconut and cherries; stir just until blended. Pour batter evenly into the prepared pans.
  3. Bake at 350 degrees F (175 degrees C) for 60 minutes, or until a tooth pick inserted into the center of a loaf comes out clean. Cool in the pan for 10 minutes, then remove to a wire rack to cool completely.

Garlic, Dill and Lemon Chicken

Ingredients:

    6 tablespoons olive oil
    2 lemons, 1 thinly sliced, 1 juiced
    4 cloves garlic, minced
    1 tbsp. of dill weeds
    1 teaspoon kosher salt
    1/2 teaspoon freshly ground black pepper
    1 cup of baby carrots
    8 small red potatoes, quartered
    4 chicken breasts (bones left in, with skin, about 3 1/4 pounds)

Directions:
Preheat oven to 450°F. Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet.In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the carrots the potatoes to the same olive-oil mixture and toss to coat. Using a slotted spoon or tongs, arrange the potatoes and carrots along the inside edge of the dish or skillet. Place the chicken in the same bowl with the olive-oil mixture and coat thoroughly. Place the chicken, skin-side up, in the dish or skillet. Pour any of the remaining olive-oil mixture over the chicken.

Roast for 50 minutes. Remove the chicken from the dish or skillet. Place the beans and potatoes back in oven for 10 minutes more or until the potatoes are tender. Place a chicken breast on each of 4 serving plates; divide the green beans and potatoes equally. Serve warm.

Black-Eyed Beans with Okra

Ingredients:
• 2 16-oz. packages frozen black-eyed peas
• 2 cups water
• 1 15-oz. can Ranch Style Beans with Jalapeno, drained
• 1 cup chopped onion
• 1 cup chopped green pepper
• 1 12-oz. or 16-oz. package frozen sliced okra
*  sausage, sliced

Procedures:
1. Add all ingredients to crock-pot.
2. Cook on low 8-10 hours.

Fried Rice (Sinangag)

Fried Rice

Ingredients:

  • 6 cups cooked white rice, refrigerated overnight
  • 1 cup barbecued pork, chopped or ham
  • 1 1/2 tablespoons soy sauce
  • 2 teaspoons salt
  • 3/4 cup green peas
  • 1/4 cup green onion, chopped
  • 1 teaspoon sugar
  • 1 teaspoon ginger, minced
  • 1 teaspoon garlic, minced
  • 3 tablespoons cooking oil

Cooking Procedure

  1. Heat cooking oil and sauté ginger and garlic.
  2. Add shrimps and cook for a minute. Remove the shrimps and set aside.
  3. Pour-in the beaten egg mixture and cook.
  4. When the egg is cooked, divide into small pieces. Add the rice and mix well.
  5. Put-in the soy sauce, sugar, and salt. Mix with the other ingredients.
  6. Add barbecued pork. Cook for 3 minutes.
  7. Add green peas and shrimp. Cook for another 3 minutes.
  8. Put-in the green onions. Cook for 2 minutes while mixing with the other ingredients.
  9. Turn the heat off and then transfer to a serving plate and serve.

Lumpiang Shanghai

Ingredients:

  • 2 lbs ground pork
  • 1/2 cup green onions
  • 1 cup carrots
  • 1 cup onion
  • 2 tsp soy sauce
  • 1 raw egg
  • 1 tsp salt
  • 2 tsp ground black pepper
  • Lumpia wrapper (Spring roll skin)

Cooking Procedure:

  1. Mix all the ingredients with the pork starting with the onion, carrots, green onions, salt, soy sauce, ground pepper, and raw egg
  2. Wrap the meat using the lumpia wrapper (for proper way, see video)
  3. Fry the wrapped meat making sure that all the sides are cooked right
  4. Serve with sweet and sour sauce (see sweet and sour sauce).

Sotanghon Guisado

Sotanghon Guisado Recipe

Ingredients

  • 1/2 lb vermicelli noodles (sotanghon)
  • 1 lb chicken
  • 1 cup celery, chopped
  • 1 1/2 cups onion, diced
  • 1 teaspoon whole peppercorn
  • 4 cups water
  • 1/4 cup annatto water
  • 2 to 3 tablespoons garlic, minced
  • 1 cup onion leeks, chopped
  • 2 tablespoons fish sauce
  • 1/2 cup carrots, julienned
  • 2 tablespoons cooking oil

Cooking Procedure

  1. Pour water in the cooking pot and apply heat.
  2. When the water starts boiling, add celery, 3/4 cup diced onions, whole peppercorns, and chicken
  3. Simmer for 40 to 60 minutes then turn off the heat and let cool.
  4. Remove the meat from the chicken using your hands. Discard the bones and skin. Set aside.
  5. Filter the liquid using a strainer and set aside. This will be the chicken broth.
  6. Soak the noodles in water until it becomes soft.
  7. Heat a clean wok or cooking pot and pour-in cooking oil.
  8. When the oil is hot enough, sauté garlic and the remaining 3/4 cup diced onions.
  9. Add-in chicken and cook for 2 minutes.
  10. Pour-in annatto water and chicken broth then bring to a boil.
  11. Stir-in the carrots and half of the chopped onion leeks. Cook for 3 minutes.
  12. Add the noodles and fish sauce then cook for another 2 minutes.
  13. Transfer to a serving plate and top with remaining onion leeks and place lemon or calamansi slices on the side.
  14. Serve hot. Share and enjoy!

Chicken Macaroni Salad Filipino Style

Chicken Macaroni Salad Ingredients:

  • 1/5 kilo macaroni noodles
  • 2 to 3 pieces, medium sized carrots
  • 1 big chicken breast
  • 500 ml of mayonnaise
  • 1 can (836 g) pineapple chunks or tidbits
  • 1 big white onion, finely chopped
  • 1/2 cup sweet pickle relish
  • 3 hardboiled eggs, diced
  • 1 cup diced cheddar cheese
  • 1/2 cup raisins
  • salt and pepper to taste

Macaroni Salad Cooking Instructions:

  • Cook macaroni noodles according to package cooking instructions.
  • In a pot, boil carrots in water for 15 to 20 minutes or until cooked.
  • Drain carrots and let cool. Peal skin then dice.
  • Boil chicken breast in water with salt. Drain chicken breast, then shred in 1 inch lengths
  • Drain pineapple chunks or tidbits.
  • Combine all ingredients while adding salt and pepper, to taste.
  • Refrigerate, then serve.

Igado, an Ilocano Dish

I have been craving for this dish for a long time since I saw a video on youtube. I Filipino Chef named Bitoy cooked this and it looked so good and healthy. So, I decided to make this dish as soon as I have the complete ingredients on hand. Here it is, my own version of Igado. We paired it with fried rice and oh! it was all so yummy! Try this, you might like it.


Anyway, I substituted the garbanzo beans with gold potato because I forgot that I didn't have the beans. Then, I added more vegetables like peas and carrots. I used pork liver instead of beef liver for it is milder than the beef. If you don't like liver, you can omit it; but I like mine with it because liver is rich in iron.

Jacob's Eight Birthday

It seems like yesterday since I gave birth to a beautiful preemie baby boy. Time flies so fast, my baby  boy is now seven turning eight year old in three this coming July. Not to mention that he would be in third grade this school year. Everyday he becomes more independent and smarter. Before we knew it, he would would feel like he wouldn't need us anymore, and that makes me feel sad thinking of it :-(. So, I better stop thinking about it and just enjoy every minute with him while we still can.

Anyway, talking back on his coming birthday, my husband and I are still torn between celebrating his birthday at home with my in- laws, and family friends, then have his coming baptism at church the next day. Knowing my in-laws, I don't think they'd like the idea of having more people at home. They prefer to make the event a family only celebration. And or, celebrating Jacob's birthday on his exact birth date with just family, and later on with family friends minus my in-laws. It is really hard to decide, but sooner or later we would need to choose between the two. The sooner the better, so we can start sending birthday invitations   to our friends and families and also Jacob's friends at school, church and in the neighborhood. This is going to be a big celebration since he would be baptized at LDS church. We are all excited for his baptism and birthday as well.

One more think to think about is whether I would cook the foods myself, or have it catered. It is very hard for me to do the cooking since I have been doing it every year. Maybe this year, we need to have the foods prepare by a caterer, otherwise I'd be very tired again this year. Oh well, I am sure my husband could really help me on this one.

Braised Beef (ala Chowking)

This is one of my favorite dish that Chowking serves. Every time I eat there this is the first thing I order, and then their siomai. I so love this dish and is craving for it, that is why I search for its recipe on the internet and luckily, I have found one. here is my finished braised beef, it is so yummy. I felt like I was eating the the restaurant!

Ingredients:
1/2 kg beef brisket
4 cups of water, add more if needed and 1/4 cup for cornstarch
2 tbsp Kikoman soy sauce
2 tbsp soy sauce
2 star anise
2 tbsp onion, minced
1-2 tbsp sugar
1 tsp cornstarch
ground pepper to taste
1 carrot, cut diagonally
2 stalks of celery, cut diagonally
spring onions to garnish

Procedure:
1. Brown the beef in a little oil in a saucepan, then combine all the ingredients except the carrots, celery and the spring onions. Simmer the beef the meat until it's tender.
2. Add the carrots and celery.
3. Dilute the cornstarch to 1/4 cup water and add to the beef to thicken the sauce.
4. Put on top of a steamy rice and garnish with spring onions.

Family Getaway at Disneyland

Once a year my family and I go for a vacation. Sometimes during Spring time and most of the time on summertime. Last year, we decided to see my family in the Philippines where we all had fun! It was a grand reunion for me and them since my husband got to meet my folks and siblings for the first time! We went to Hundred Island, and Dinggalang beach in Aurora province. Knowing my husband love swimming,  my brother took him to a resort in Nueva Ecija which is run by some native people. Anyway, we sure had a blast, swimming and hiking and eating lots of foods. It was the most expensive, but memorable vacation we have ever had as family.
This year, we planned on going to Disneyworld with my brother in-law and his family, but sad to say that it didn't work because we decided to go to Utah to attend our church events, and also visit the national parks there such as The Arches, Bryce, Capitol Reef, and Zion's. Oh man, that was am amazing experienced to see those beautiful parks.
Anyway, next year we already made a plan on going to see the Grand Canyon in Colorado and afterward go to Disneyland in California and then visit my cousins who happened to live in that state. My Little Pumpkin

Here is a photo of my son after he got all the eggs. Yes, they are real boiled eggs. We just colored them which has became a tradition in our home during Easter Sunday. Anyway, for whatever reason, Jacob doesn't care about Easter basket. Egg hunting during Easter is what all that matters to him. Which is very good because he doesn't really like candies and chocolates, and he has tons of toys, too!

Alarm System Gives Me Peace

Last week was the Spring break at my son's school and so we decided to attend the semi - annual General Conference for the church where we belong. It was a two day event which was Saturday and Sunday. We kind of enjoy the event; it was uplifting, spiritual and motivational, plus we got to see and listen to our church leaders in person. After the event, we still have five more days to spend in Utah. While there, I tried to not worry about being away from home, but I just couldn't. It was hard for me to imagine our home being robbed by some criminal. I just wished we have alarm systems installed, that way I wouldn't worry about it.

Anyway, we are back home now after visiting four national parks in Utah (Bryce, Zion, Capitol Reef and the Arches). We've found our home the same before we left it. It wasn't even damage by the tornado that hit the city next to ours. Our car though that was parked in park 'n fly near the airport had a small damage from the hail, but I am glad it is fixable and the insurance covers it. I wonder it the total alarm system covers the damage at home caused by tornado; oops, wait a minute....the home insurance covers it...I almost forgot it, lol.

Dinner at Campisis Restaurant

After our long day is over on Monday where we spent great time at the Dallas World Aquarium, Harbor place in Rockwall, and park, we had a nice dinner at an Italian restaurant in Rockwall. Jacob had his favorite sausage and cheese pizza, while hubby and I have had a vegetarian pizza. Our appetizer was a dish of crab claws which was bit pricey, but very yummy! The pizzas were so delicious, too! I feel like I was eating a cracker with veggies on top of it. The crust was very crunchy with just the right amount of sauce.... we loved it! Here they are, don't they look sumptuous?

Jacob almost finished her own pizza....good thing he let us have a couple of it, lol. You can tell how much he loves that pizza in front of him.

Expand 'n Gro Concentrated Planting Mix, Perfect Soil for My Potted Plants

The best time to start gardening is in the month of March and April where the weather is perfect (not hot nor cold). Spring time is my favorite season of all. Traditional Pancake

Last weekend, my son requested a pancake for breakfast. I don't normally make breakfast; but that day, I decided to make some for him. He was very happy when I said 'yes.' I can tell how much he missed having pancakes because he gobbled and in just a matter of minutes he was done eating :-). 



These pancakes were all so yummy! Next time I would like to make a buttermilk pancakes, see how it goes. I hope it will be fluffier than these. How about you, do you like pancakes, too?

Kare-Kare (Stewed Oxtail with Vegetable in Peanut Sauce)

Kare-kare or (Ox tail stew) Commonly beef boiled or oxtail cooked with peanut butter and vegetables. Garnish with shrimp paste (bagoong alamang) on the side.

Ingredients:
  • 2 lbs. Ox tail Or Tripe (optional)
  • 1 Sm. Banana Heart (quartered)
  •  1 bundle Pechay or Bokchoy
  •  2 eggplant sliced thinly
  •  1/4 cup or more peanut butter
  •  1/4 cup Shrimp paste (bagoong alamang guisado)
  •  1 mall onion diced
  •  1/2 bundle string beans or green beans
  •   4 tbsp. atswete (dissolved in water)
  •  1/4 cup powdered toasted rice or dissolved cornstarch alternative
  •  1/2 liter of water

Kare-Kare Cooking Instructions:

Boil water in a big pot and place in meat or ox tripe. Simmer over low heat until tender. Strain and keep the stock. Set aside the boiled oxtail/ ox tripe.

Blanch vegetables in batches into the pot of stock. Set aside.

In separate pan, heat cooking oil. Saute garlic and onion until fragrant. Add in oxtail or ox tripe and saute for a few minutes.

Pour in broth from boiled oxtail and bring to a boil. Add in peanut butter and stir until dissolved. Allow to boil.

Pour in atsuete juice, and stir well. Add in dissolved corn starch, salt to taste. Stir until desired thickness.

Soak in blanched vegetables for a few minutes or serve them separately. Turn off heat.
   
Serve with shrimp paste (bagoong alamang).
