Carving A Pumpkin with Daddy

Finally, Jacob's much awaited carving of pumpkin has come. He didn't like to do it with Daddy because he didn't like the smell of it. So, Matt ended up doing it himself, while Jake was waiting and playing. Of course, Jake loves the Jack-O-Lantern after it was carved.

CookingTips and Quick Substitutions

Substitutions:
1 cup buttermilk: 1 cup milk + 1 tablespoon lemon juice (not in raw applications, like buttermilk dressing)
1 teaspoon baking powder: ¼ teaspoon baking soda + ½ teaspoon cream of tartar, OR ¼ teaspoon baking soda + ½ cup buttermilk, sour cream or yogurt (for ½ cup of liquid in recipe)
1 cup heavy cream: 1 cup evaporated milk
1 cup brown sugar: 1 cup granulated sugar + 1 ½ tablespoons molasses, OR ½ cup dark brown sugar + ½ cup granulated sugar
1 cup sour cream: 1 cup yogurt (low-fat or regular)
1 cup cake flour: 1 tablespoon corn starch + 1 cup (minus 1 tablespoon) all-purpose flour
1 teaspoon cream of tartar: 3 teaspoons lemon juice or vinegar (for meringue or similar), OR 2 teaspoons baking powder (for tartar and 1 teaspoon baking soda)

“Band-aids”:
Too salty: add small amounts of vinegar (any kind) until the salty taste dies down
Stale: add a piece of bread to the package (works especially well for old brown sugar)
Dry turkey: as you carve it, spray the turkey with warm chicken stock
Lumpy gravy: puree gravy in a blender (make sure to secure the lid so you don’t burn yourself!)

Friday Food Trip: Pumpkin Bread

This time of the year, I bake bread and this is one of the bread I love beside Banana nut bread and Amish friendship bread. I use splenda instead of regular sugar since hubby and I are both diabetic. Try it and fall in love with this one over and over again.
  • 2 cups white sugar
  • 1 1/4 cups light brown sugar
  • 1 cup walnut oil
  • 1 (29 ounce) can pumpkin puree
  • 4 eggs
  • 4 2/3 cups all-purpose flour
  • 1 tablespoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/2 teaspoons ground cloves
  • 1 1/2 teaspoons ground coriander
  • 1 1/2 teaspoons salt
  • 1/2 cup cream sherry
  • 1 1/2 cups chopped walnuts
  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease three 8x4 inch loaf pans.
  2. In a large bowl, beat together white sugar, brown sugar and oil. Stir in the pumpkin. Mix in the eggs one at a time, beating well with each addition.
  3. In a separate bowl, sift together flour, baking soda, cinnamon, cloves, coriander and salt. Stir dry ingredients into pumpkin mixture until smooth. Stir in cream sherry. Beat till thoroughly blended, 1 to 2 minutes. Fold in nuts. Spoon batter into 3 greased 8x4 inch loaf pans, filling no more than three quarters full.
  4. Bake in preheated oven until a tester inserted into center of a loaf comes out clean, about 65 minutes. Let stand 5 minutes in pans before turn out onto wire racks to cool completely. Can be kept at room temp. for 4 days or frozen.

Even though Jake is already five year old, every once in awhile he still have his moods especially after school. I guess because he is tired already. But aside from that, he is a happy little guy who loves to draw and read books and going to school. Here some of the photo taken when he was throwing a fit!

I am amazed to find some friends I met while serving a mission for church in the southern part of the Philippines. I can not believe it; it's been 15 years since. What A Day!

It is still gloomy in here, but the rain stopped. Now I can go see Ate Delia and taste the Bilo-bilo she saved for me :-)! My chores are done as well as some of the paid posts given to me. I am so ready to go; just waiting for my son to finished nick jr. Hubby on the other has just left home for work.

At Last My Craving is Satisfied! Thanks, Hon :-)

For whatever reason, since last night I was craving for this Mexican soup called "Posole". So, last night I asked Matt if it is okay to have our lunch at Mexican resto. He agreed, and so I had this dish. Have you heard about Menudo, Mexican style? This is very similar to Posole, only instead of "pork" they put "tripe" in it. Pinoy style Menudo is way different from what Mexican has. You should try it, it is yummy and a little bit spicy.


By the way, the soup I have posted from my previous Food Trip Friday is a Vietnamese soup called Pho; I think you guys should try that, too for it is very yummy as well. You can choose from meatballs, beef, chicken or combination of the three. Since we Pinoys love soup, I am pretty sure you guys will love it, too!

Just Wondering...

I was wondering why the PR for this blog has gone down from PR1 to "0". When I checked it on PR checker, the PR1 still there. What is going on? On my PPP account it is "0". Which one of them is wrong or have not updated the PR yet? I am not complaining, just wondering :-)! I just hope that "1" will remain.

Food Trip Friday: Lomi

Last night, a friend of ours invited us over for a dinner. She served us Lomi, which on of the Pino foods I have missed so much. The lomi was delicious and my son loves it! I looked online for a recipe and found it easier to cook than I have thought; soo I decided to make it one of these days.

Ingredients:
* 1/4 kilo lomi noodles (flat)
* 1/2 cup pork (sliced into strips)
* 1/2 cup shrimps, shelled
* 1/4 cup chopped ham
* 1 large onion, chopped
* 3-4 cloves garlic, crushed
* 1 cup shredded cabbage
* 1 tbsp. chopped carrots
* 6-7 cups chicken or meat broth
* 2 tbsp. cooking oil
* 1 tbsp. cornstarch.dissolved in water
* 2 raw eggs
* 2 tbsp. patis
* salt to taste
* 1 tsp. vetsin

Procedures:
Saute garlic and onion. When brown add pork, shrimps, and ham. Add patis; stir for 2 minutes. Add 1/2 cup water, cover and simmer until water is almost dry. Add broth. Cover and let boil for 10 minutes.
Drop in noodles, carrots, and shredded cabbage. Let boil for 3 minutes and thicken with dissolved cornstarch. Put off the heat.
Beat eggs and stir in. Do not boil. Serve at once.
