French Toast on July 4th Breakfast!

One of my son's favorite breakfast is French Toast, so every time he asks me to make some, I get excited because I know he would eat it. I got this recipe from AllRecipes.com and it can be a great breakfast to enjoy by your family on the coming 4th of July.
Isn't it colorful? That's the color of July 4th alright! Go and feel free to grab this easy recipe every one will enjoy at breakfast time!

There are many, fancy variations on this basic recipe. This recipe works with many types of bread - white, whole wheat, cinnamon-raisin, Italian or French. Serve hot with butter or margarine and maple syrup.

Ingredients:
  • 6 thick slices bread
  • 2 eggs
  • 2/3 cup milk
  • 1/4 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 teaspoon vanilla extract (optional)
  • salt to taste
Procedure:
  1. Beat together egg, milk, salt, desired spices and vanilla.
  2. Heat a lightly oiled griddle of skillet over medium-high flame.
  3. Dunk each slice of bread in egg mixture, soaking both sides. Place in pan, and cook on both sides until golden. Serve hot.

My husband is getting addicted to buying songs at iTunes and is driving me nuts! Almost every time I check our iPod it has a new song loaded in it. I told him we need to save money, and the only was we can do that is to avoid unnecessary purchase such as this one. He told me “this will be that last one, Honey!”, but still he cannot resists it because he said it only costs him .99cents each song. Well, I guess I can spare him with that. I have to admit it, I also love listening to music especially the country songs, patriotic songs, and church hymns. My son loves the songs they sing at church also. As you can see, iPod is a useful gadget every one can enjoy with.

Anyway, back to patriotic songs, this coming Saturday, our church will be holding a 4th of July celebration. 4th of July Cheesecake!

"Salute the red, white and blue with this layered dessert studded with fresh blueberries and strawberries." From AllRecipes.com

INGREDIENTS:
* 1 quart strawberries, divided

* 1 1/2 cups boiling water
* 2 pkg. (4 serving size) JELL-O Brand Strawberry Flavor Gelatin
* Ice cubes

* 1 cup cold water
* 1 (10.75 ounce) loaf pound cake, cut into 10 slices
* 1 1/3 cups blueberries, divided
* 2 (8 ounce) packages PHILADELPHIA Cream Cheese, softened
* 1/4 cup sugar

* 1 (8 ounce) tub COOL WHIP Whipped Topping, thawed

DIRECTIONS:
1. Slice 1 cup of the strawberries; set aside. Halve the remaining 3 cups strawberries; set aside. Stir boiling water into dry gelatin mixes in large bowl at least 2 min. until completely dissolved. Add enough ice to cold water to measure 2 cups. Add to gelatin; stir until ice is completely melted. Refrigerate 5 min. or until gelatin is slightly thickened (consistency of unbeaten egg whites).
2. Meanwhile, line bottom of 13x9-inch dish with cake slices. Add sliced strawberries and 1 cup of the blueberries to thickened gelatin; stir gently. Spoon over cake slices. Refrigerate 4 hours or until set.
3. Beat cream cheese and sugar in large bowl with wire whisk or electric mixer until well blended; gently stir in whipped topping. Spread over gelatin. Arrange strawberry halves on cream cheese mixture to resemble the stripes of a flag. Arrange remaining 1/3 cup blueberries on cream cheese mixture for the stars. Store any leftover dessert in refrigerator.

Sun Myths

As you gear up for fun in the sun, make sure to the know tanning myths and facts so that you can keep your family safe.

New skin cancer diagnoses are on the rise internationally. In the
U.S., the American Cancer Society estimates about one million new cases of basal or squamous cell carcinoma and about 60,000 cases of malignant melanoma will be diagnosed this year in the U.S. Many of these skin cancers could have been prevented by protection from the sun's rays.

If you're gearing up for a trip to the beach, understand that the truth about these common sunburn and tanning myths so you can keep you and your family safe.

"It's safe to tan if you do it slowly." Wrong! When skin is exposed to sun, its melanin increases, creating a tan. This indicates skin damage. The darker the tan, the higher the risk of skin cancer, no matter how gradual the tanning process.

"Starting the summer off with a sunburn is a good way to begin the tanning process." One bad burn early in life can mean skin cancer later.

"If I put waterproof sunscreen on my child, he/she can play all day in the pool and be safe." That's not quite right. Waterproof sunscreen may last up to an hour in the pool, but it should be applied every hour or so because many products rub off.

"My children are sun safe if they wear T-shirts while they play in the pool."
Surprisingly, the typical light-weight, white cotton T-shirt is not the best protection, and when wet, is less effective than using water-resistant sunscreen. Choose tightly woven fabrics that you can't see through when held up to a light and use in combinations with sunscreen.

"Tanning beds are a safer way to tan." Indoor tanning is not safer than outdoor sunlight. Popular among women, tanning beds emit dangerous levels of UV rays. The American Academy of Dermatology and the World Health Organization recommend that no one under age eighteen be allowed to use a tanning bed. A recent study published in the Journal of the National Cancer Institute reported tanning bed use was linked to a 2.5 times increased risk of squamous cell carcinoma and a 1.5 times increased risk for basal cell cancer.

Grilled Salmon with Mustard & Herbs

My family and I loves fish especially Salmon. I can't think of other ways to cook it other than bake or broil it. While checking my email, Real Age sent me healthy recipes and foods that is heart friendly. Here it is grab it if you care enough for you heart :-)!

Salmon cooks over a bed of lemon and fresh herbs to infuse it with flavor and keep the fish tender and moist. We like a blend of thyme, tarragon and oregano, but any of your favorite herbs will work. Make it a meal: Serve with grilled new potatoes tossed in an herb vinaigrette and steamed green beans.

Ingredients:

2 lemons, thinly sliced, plus 1 lemon cut into wedges for garnish
20-30 sprigs mixed fresh herbs plus 2 tablespoons chopped, divided
1 clove garlic
1/4 teaspoon salt
1 tablespoon Dijon mustard
1 pound center-cut salmon, skinned (see Tip)

Procedures:

1. Preheat grill to medium-high.
2. Lay two 9-inch pieces of heavy-duty foil on top of each other and place on a rimless baking sheet. Arrange lemon slices in two layers in the center of the foil. Spread herb sprigs over the lemons. With the side of a chef’s knife, mash garlic with salt to form a paste. Transfer to a small dish and stir in mustard and the remaining 2 tablespoons chopped herbs. Spread the mixture over both sides of the salmon. Place the salmon on the herb sprigs.
3. Slide the foil and salmon off the baking sheet onto the grill without disturbing the salmon-lemon stack. Cover the grill; cook until the salmon is opaque in the center, 18 to 24 minutes. Wearing oven mitts, carefully transfer foil and salmon back onto the baking sheet. Cut the salmon into 4 portions and serve with lemon wedges (discard herb sprigs and lemon slices).

Tip: How to skin a salmon fillet: Place skin-side down. Starting at the tail end, slip a long knife between the fish flesh and the skin, holding down firmly with your other hand. Gently push the blade along at a 30° angle, separating the fillet from the skin without cutting through either.

I Am Bored!

I don't know why, but I have been lazy lately with my blogs. I still check it everyday and visit blogs, and read posts 'though. I guess, I am getting bored. My Parents Didn't Buy Me Yet!

The other night while I was looking at my old albums, I saw many pictures of my husband and I when we were still newly wed. Pictures from our old apartment and from our new home bring back memories. I couldn't help but smile and sometimes cry. Anyway, I didn't know that my son, Jacob was behind me watching the slideshow also. It made me laugh when he asked me why wasn't he included on those pictures. I have to explain to him that he wasn't born yet. But he kept asking questions like why? Then finally, when he got tired of hearing my answer, he said: "oh, was it because you and Daddy didn't buy me, yet, Mommy"? Hahahaha...what a question! My some is barely 5 year old and I don't have any idea how will I explain with him how he got here. I did the best I could like saying that he was still in heaven with God then to God sending him to us. How about you guys? Care to share you two cents worth here. Time will come that I will need to explain to him this topic in a manner that is simple yet easy to understand.

Little explorer called Hummingbird became my favorite bird when I came to united States. They are considered tropical birds whose migration is part of their lifecycle. During summer, they wake me up early in the morning when they start singing. Oh, how I love these little creatures. I really enjoy the labor they made in my backyard giving me flowers and stuffs. Indian-Spiced Kale & Chickpeas

Chickpeas make this exotic dish a terrific player in any vegetarian menu. Source: www.realage.com

1 tablespoon extra-virgin olive oil
3 cloves garlic, minced
1-1 1/2 pounds kale, ribs removed, coarsely chopped (see Tip)
1 cup reduced-sodium chicken broth or vegetable broth
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/4 teaspoon garam masala (see Ingredient note)
1/4 teaspoon salt
1 15-ounce can chickpeas, rinsed

Heat oil in a Dutch oven over medium heat. Add garlic and cook, stirring, until fragrant, about 30 seconds. Add kale and cook, tossing with two large spoons, until bright green, about 1 minute. Add broth, coriander, cumin, garam masala and salt. Cover and cook, stirring occasionally, until the kale is tender, 8 to 10 minutes. Stir in chickpeas; cover and cook until the chickpeas are heated through, 1 to 2 minutes.

How to Make a Lattice Top Pie Crust

My husband and I loves pies; so we make our own pies to save money and get the taste we wanted. If you make your own pies, you might want to try this easy to make lattice I got from www.realage.com.

Lattice tops look fancy but this technique is super-easy to master. Follow these easy step-by-step instructions.






Make a Lattice-Top Pie Crust1. Cut the dough into 1-inch strips using a pastry wheel or sharp knife.

Make a Lattice-Top Pie Crust2. Lift off every other strip.

Make a Lattice-Top Pie Crust3. Place the strips next to each other on top of the pie, leaving about a 1-inch gap between strips. Use the shorter strips for the edges and the longer ones for the middle of the pie. (You may not need to use the smallest outermost strips.)


Make a Lattice-Top Pie Crust4. Fold back the first, third and fifth strips of dough all the way to the edge of the pie. Place a shorter strip of dough across the second and fourth strips, about 1 inch from the edge. Unfold the folded strips over the crosswise strip.

Make a Lattice-Top Pie Crust5. Fold back the second and fourth strips of dough over the first crosswise strip.

Make a Lattice-Top Pie Crust6. Place another strip crosswise, about 1 inch from the first strip.

Make a Lattice-Top Pie Crust7. Unfold the folded strips over the crosswise strip.

Make a Lattice-Top Pie Crust8. Fold the first, third and fifth strips of dough back over the second crosswise strip.

Make a Lattice-Top Pie Crust

9. Place a third strip of dough, about 1 inch from the second strip.

Make a Lattice-Top Pie Crust

10. Unfold the folded strips over the third crosswise strip.

Make a Lattice-Top Pie Crust11. Fold the first, third and fifth strips of dough back over the third crosswise strip.

Make a Lattice-Top Pie Crust12. Continue folding back alternating strips of dough and placing crosswise strips until the top is covered with woven strips.

Make a Lattice-Top Pie Crust13. Trim any overhanging crust with a pair of kitchen scissors or a knife.

Make a Lattice-Top Pie Crust14. Crimp the outer edge of the crust with a fork or flute it with your fingers.

Tips for Cooking Foreign Dishes

Let's face it; cooking exotic recipes typically bumps up our blood pressure a couple points. But take heart! Following a few simple tips can make the experience a little easier and quite a bit more enjoyable.
  • Try not to let the long ingredient list overwhelm you. Foreign dishes can call for several spices and sauces (often combined for an overall sauce), as well as vegetables, but that doesn't mean they take longer to make. If you can have the ingredients out and prepared beforehand, the active cooking time will go faster and much more smoothly.

  • If the dish requires frying (like egg rolls or tempura dishes), use a deep-fry or candy thermometer and make sure it measures between 350 and 375 degrees Fahrenheit. Make sure the food is at room temperature - this prevents the drop-in temperature from severely reducing and lessens splattering.

Importance of Music in Children's Life

Music plays an important part in everyone's life including children. Through music, we help our children's mind in preparation for skills development such as communication, cognitive, and even abstract reasoning skills. As we expose our children to music before they go to school, their neural coding will really help them with their entire lives. And that is the reason why even before my son was born, I started exposing him to music by singing with him as well as dancing. Now he is very much in to singing and dancing. It would be nice to enroll him to children music programs since three months summer vacation is a long wait till the school starts this year. Fruit Salsa and Cinnamon Chips

Got this from sister at church, thought you might want to try this especially those who love salsa and chips like my husband.

Fruit Salsa:

  • 2 kiwis, peeled and diced
  • 2 apples, peeled, cored, and diced
  • 1 pound fresh strawberries, diced
  • 1 (8-ounce) package frozen raspberries, thawed
  • 2 tablespoon granulated sugar
  • 1 tablespoon brown sugar
  • 3 tablespoon fruit preserves, any flavor
Cinnamon Chips:
  • 10 (10-inch) flour tortillas
  • vegetable oil for frying
  • 2 cups cinnamon-sugar mixture to taste

Fruit Salsa: In a large bowl, mix kiwis, apples, strawberries, raspberries, granulated sugar, brown sugar, and fruit preserves. Cover and chill for at least 20 minutes.

Cinnamon Chips: Cut tortillas into strips or triangles. Heat oil in frying pan. Drop tortilla strips into hot oil a few at a time. When golden brown, remove and immediately drop into cinnamon-sugar mixture. Coat chips with mixture, then place on paper towels. Allow chips to cool. Serve with fruit salsa.

Pancit Canton

My husband and son prefers to eat Pancit Canton than Pancit Bihon so I decided to cook this one from now on instead. Got this recipe from FilipinoFoods.net. If you guys want to try this one, feel free to copy it.

Ingredients:
12 ounces pansit canton noodles
1 chicken breast, cooked and shredded
4 cups chicken broth (from boiled breast)
1/2 pound pork, sliced in small pieces
1/2 pound shrimps, shelled and deveined
4 tablespoons cooking oil
1/2 cup chopped onion
2 tablespoons garlic, minced
1/2 cup Chinese sausages, sliced
cauliflower, cut to bit size
2 cups snow peas (sitsaro)
2 cups cabbage, sliced into strips
1 cup celery, sliced
1 carrot, diced
1/4 cup scallions, diced
4 tablespoons soy sauce
1 tablespoon sesame oil
Salt and pepper to taste

Cooking Instructions:
In a big pan or wok, sauté in oil the garlic and onions. Then add sliced pork until cooked.
Add 2 cups of chicken broth and add the shredded chicken, sliced Chinese sausages, shrimps, snow peas, cabbage, celery and diced carrot. Simmer for about 10 minutes or until cooked.
Add the remaining 2 cups of chicken broth and the pansit canton noodles. Let simmer until noodles are soft.
Add the scallions, sesame oil then salt and pepper to taste.
Serve hot.

Philippines 111th Independence Day!

"The Philippine Declaration of Independence occurred on June 12, 1898 in the Philippines, where Filipino revolutionary forces under General Emilio Aguinaldo (later to become the Philippines' first Republican President) proclaimed the sovereignty and independence of the Philippine Islands from the colonial rule of Spain after the latter was defeated at the Battle of Manila Bay during the Spanish-American War. The declaration, in the form of a proclamation, in the presence of a huge crowd, was done on June 12, 1898 at the ancestral home of General Emilio Aguinaldo between four and five in the afternoon in Cavite el Viejo (now Kawit), Cavite, some 30 kilometers South of Manila. The event saw the unfurling of the National Flag of the Philippines, made in Hong Kong by Mrs. Marcela Agoncillo, Lorenza Agoncillo and Delfina Herboza, and the performance of the Marcha Filipina Magdalo, as the Nation's National Anthem, now known as Lupang Hinirang, which was composed by Julian Felipe and played by the San Francisco de Malabon Marching band."

World's Best Lasagna!

If you love lasagna, you might want to try this recipe; it takes a lot of works as the owner of the recipes said, but she also said it is worth it! I will try gonna try this one of these days.






INGREDIENTS
:
  • 1 pound sweet Italian sausage
  • 3/4 pound lean ground beef
  • 1/2 cup minced onion
  • 2 cloves garlic, crushed
  • 1 (28 ounce) can crushed tomatoes
  • 2 (6 ounce) cans tomato paste
  • 2 (6.5 ounce) cans canned tomato sauce
  • 1/2 cup water
  • 2 tablespoons white sugar
  • 1 1/2 teaspoons dried basil leaves
  • 1/2 teaspoon fennel seeds
  • 1 teaspoon Italian seasoning
  • 1 tablespoon salt
  • 1/4 teaspoon ground black pepper
  • 4 tablespoons chopped fresh parsley
  • 12 lasagna noodles
  • 16 ounces ricotta cheese
  • 1 egg
  • 1/2 teaspoon salt
  • 3/4 pound mozzarella cheese, sliced
  • 3/4 cup grated Parmesan cheese
DIRECTIONS:
  1. In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
  2. Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
  3. Preheat oven to 375 degrees F (190 degrees C).
  4. To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  5. Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

We are finally here....

After 3 days of long drive, we are finally back here in Texas. We have traveled safely with God's helped and very thankful for that. We are now staying a night at the hotel and will be busy tomorrow unloading the truck with the help of the people we hired to do the unloading. I couldn't wait to get settled and enjoy our new place. We have visited close friends already tonight. It was nice catching up with the things that have happened last year :-).
