Creamy Caramel Flan

"This recipe is a cross between egg custard and cheesecake. Rich and delicious."

Ingredients:
  • 3/4 cup white sugar
  • 1 (8 ounce) package cream cheese, softened
  • 5 eggs
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 fluid ounce) can evaporated milk
  • 1 teaspoon vanilla extract
Procedures:
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a small, heavy saucepan over medium-low heat, cook sugar, stirring, until golden. Pour into a 10 inch round baking dish, tilting to coat bottom and sides. Set aside.
  3. In a large bowl, beat cream cheese until smooth. Beat in eggs, one at a time, until well incorporated. Beat in condensed and evaporated milk and vanilla until smooth. Pour into caramel coated pan. Line a roasting pan with a damp kitchen towel. Place baking dish on towel, inside roasting pan, and place roasting pan on oven rack. Fill roasting pan with boiling water to reach halfway up the sides of the baking dish.
  4. Bake in preheated oven 50 to 60 minutes, until center is just set. Cool one hour on wire rack, then chill in refrigerator 8 hours or overnight. To unmold, run a knife around edges of pan and invert on a rimmed serving platter.

Cooking Day!

Saturday is the day my schedule to make meals for Sunday since we are busy at church almost all day. Here are some of the foods I cooked that are good for at least four to five days. There will be eaten with steamed rice and either meat, fish or tofu.

Ginisang Calabasa (with ground beef), my in-laws favorite.... and Jake's fave, too!

Ginisang Ampalaya, my favorite and is good for those with diabetes because it can help lower blood sugar level.

Turon for dessert which my families favorite :-)!

And pinakbet using cooked shirmp paste.

Google Adsense

I did sign up for adsense long time ago and now I have received email asking to verify my phone number. I don't know how to do it. Then, came another email telling me about my PIN number which I got it thru mail today. The problem is I can not find any link to change my address, link to put the code or PIN as well as link regarding payments and stuffs. Anybody who could help me, I would appreciate it a lot. I really tried everything and follow what they said but, those links are nowhere to be found in my account. I am having headache on how to figure adsense out and how this works.

Sweet & Sour Sauce

This sauce is good for lumpia, fish ball, squid ball, kikiam, siopao, and any foods you like to dip into it. I got the recipe from www.mixph.com. For more Pinoy recipes and sauces, visit this site.

Mix:
  • 1/2 cup - water
  • 1/4 cup - sugar
  • 3 T - vinegar
  • 1 T - cornstarch
  • 1/2 t - salt
  • 2 T - oil
  • 3 T - catsup
  • 1 pc - siling labuyo, chopped

Cook until translucent texture is obtained.

Mango Lassi Smoothie

A lassi is an Indian smoothie made with yogurt, sometimes offered as an aperitif or as a "side" to calm down a fiery meal. Thanks to a ripe mango and orange-flower water, this version is sweet and fragrant. It's perfect for an afternoon refresher or an after-dinner treat.

Ingredients:
  • 1 cup chopped peeled mango
  • 1/3 cup peach sorbet
  • 1/2 cup nonfat vanilla yogurt
  • 1/4 cup orange juice
  • 1/8 teaspoon orange-flower water

Directions:

1. Place ingredients in the order listed in a blender. Pulse twice to chop mango, stir well, then blend until smooth. Serve immediately.

Authentic Chicken Inasal

My son's birthday is coming very soon. I can't think of something to serve for our Pinoy friends aside from barbecue, so I looked online and found this recipe:

Ingredients:
2 Chickens (free range if available)
3/4 cup Filipino vinegar
1/4 cup Garlic finely minced
2 stalks Lemon grass optional

Salt
Annatto oil (see notes below)
Wooden skewers
Spiced vinegar

Additional Ingredients:

2 free-range chickens, approx. 3 pounds each, or if you can find smaller chickens, use 3 of them

3/4 cup Filipino vinegar, palm if you can find it, or cane; or if you must, the equivalent in kalamansi juice (available in the frozen aisle of your Asian market if you don’t have access to fresh)

1/4 cup garlic, minced very finely, or better yet, mashed into a paste with 2 teaspoons sea salt

achuete or annatto oil, made by steeping 1/4 cup annatto seeds in 1/2 cup hot oil for half an hour (If not available, you may mix a small amount of paprika and tumeric to achieve the same color.)

thick wooden skewers, soaked for 1 hour in water prior to cooking

Bottled spiced vinegar for serving, or make your own by mixing Filipino vinegar, lots of crushed garlic, a bit of salt, and a handful of Thai peppers or other tiny red hot peppers

Cooking Instructions:

1. Quarter the chickens, or if using the small ones, halve them. Marinate in the vinegar, garlic and salt, several hours or overnight, turning several times.

Preheat grill to 350 degrees. Make sure your grill is cleaned and oiled well. Cook over indirect heat for 20 minutes, basting with the achuete oil.

2. Turn and cook for 10-15 minutes more, or until thickest parts of chicken exude clear juices when pierced. Can also be made in a grill pan on the stove if no outside barbecue is available.

3. Serve immediately with the spiced vinegar. Other welcome additions to the vinegar: some soy sauce or fish sauce if you like, or even some minced ginger.Another technique we’ve found to work well, is to heat the oil in which the annatto is to be steeped, and to steep the garlic (and lemon grass if using) together with the seeds. This ensures a more even distribution of flavors. Just remember to discard this mixture when you’re done with the cooking, as you risk botulism from the garlic. Or, if you want to make it ahead of time, be sure to refrigerate the oil to retard any toxins from developing.

4. If your chicken is particularly fatty, you could render the fat slowly in a skillet, and use that instead of cooking oil to steep the annatto seeds. In which case, you’ll want to have enough not only for basting but also for serving later, as there’s nothing more appetizing than chicken inasal drizzled with this orange concoction.

Saturday 9: Heatwave

1. It’s July. How has the weather been where you are?
~~ It is very hot, almost everyday the temperatures is up to 3 digits! Knowing Texas, it's really hot!
2. What is the best way for you to beat the heat?
~~ Shower, swimming poll, drink lots of water, stay inside, and put sunscreen.
3. “It’s not the heat, it’s the humidity.” Do you buy that?
~~ Here in Texas...heat and humidity both sucks!
4. Do you like hot tubs or saunas?
~~ Sauna, but my health wouldn't let me, bummer!
5. What’s the hottest you’ve ever been?
A 108 degrees temp. the other day.
6. How many times do you hit the beach in the summer?
~~ There is no beach close by, knowing Texas. This year we have at least three times beach vacation; and that is what I am missing living in Virginia!
7. When you were a kid, what did you do in the summer?
~~ Went to beach resort, took a shower at least twice a day.
8. Surfing. Have you ever gotten on a surfboard? Body surf?
~~ Neither. I think I need to live in CA or Hawaii if I want to surf.

Rubs

Rubs are seasoning mixtures that are applied to meats before grilling to impart spicy or smoky flavors. The best rubs are often combinations of strong and mild spices and herbs that enhance the flavor of the meat without being overbearing. Rubs are an easy way to infuse exciting ethnic flavors--from Cajun to Korean--into your grilled meats. When oil or another wet substance is included in the rub recipe, it is called a wet rub. A little moisture helps the rub adhere to the meat. Setting aside rubbed meats for anywhere from 30 minutes to overnight allows the spices to permeate the meat.

Scrumptious Salmon Cakes

Whether you use canned salmon or left over one, this recipe will surely become one of your family's favorite!

Ingredients:
3 ounces salmon, canned in water
2 tablespoon green onion, chopped
2 tablespoon red bell pepper, chopped
2 tablespoon sour cream
2 tablespoon lemon juice
1/8 teaspoon black pepper
6 crackers, whole wheat
1 tablespoon liquid-egg substitute
1/8 teaspoon thyme, ground

Directions:
  1. Use canned salmon (drained), salmon in a pouch, or leftover cooked salmon.
  2. Wash and finely chop green onion and bell pepper.
  3. In a medium bowl, gently flake salmon.
  4. Stir in 2 tablespoons of the chopped red pepper, green onion, 1 tablespoon of the sour cream, 1 tablespoon of the lemon juice, and black pepper.
  5. Place 4 crackers in a food processor or blender and pulse to make crumbs.
  6. Add cracker crumbs and egg substitute to salmon mixture, mixing thoroughly to combine.
  7. Divide and form mixture into 2 small balls, then flatten into cakes approximately 1/4-inch thick.
  8. Saute´ cakes over medium-high heat in a skillet coated with non-stick cooking spray until golden brown on both sides.
For lemon-herb sauce:
  1. Mix together remaining 1 tablespoon of sour cream, remaining 1 tablespoon of lemon juice, and thyme
  2. Drizzle over salmon cakes

Home Security is a Must!

Having experienced burglary years back when I was still single and living overseas gave me phobia. I became paranoid that when I came here in United States, I make sure that our doors, windows and gate are locked even when we are home. My husband assured me that nothing like that will happens here. But I still bugged him to have a home security system be installed into our house. I just want ourselves protected, at peace and safe. There are many crimes happening like burglaries and stuff like that mainly because of poverty and if we want our loved ones safe from harm and danger, home alarm is one sure way to do it. Even if you only live in an apartment, you still need to protect you family; I have seen people have a security system installed into their apartment.

Stuffed Crust Pizza

Treat your pizza lovers to this stuffed-crust-pizza, with melted cheese stuffed in the crust the last bite is as good as the first.

  • 12 Rhodes™ Dinner Rolls or 1 Loaf Rhodes™ Bread Dough, thawed & risen
  • 5 sticks mozzarella string cheese
  • 1/2 cup pizza sauce
  • favorite pizza toppings

Spray counter lightly with non-stick cooking spray. Roll combined rolls or loaf into a 16-inch circle. Cover with plastic wrap and let rest 10-15 minutes.

Remove wrap and place on a 14-inch sprayed pizza pan (edges will overlap pan). Cut each string cheese in half and arrange, 1-inch in around the edge of the dough circle. Bring the edge of the dough over the cheese and press to seal it inside. Continue this around the entire circle. Press seams a second time to make sure they are fully sealed.

Top with sauce and your favorite pizza toppings. Bake at 400°F 10-20 minutes or until crust is golden brown.

Friday Fill-Ins # 132

Serendipity
And...here we go!

1. The last thing I ate was Spicy Tofu and Boiled Egg.
2. Polo Shirt and Pants for my son is something I recently bought.
3. When it rains, it really cools the weather down.
4. Matt (my husband) was the first person I talked to today.
5. Hugs are the best way to calm me down.
6. Knowing that God loves me gives me extra comfort.
7. And as for the weekend, tonight I'm looking forward to talking with my family back home, tomorrow my plans include grocery shopping and Sunday, I want to spend a quiet time with my hubby and son!

Salt Grass Steak at Last!

The other night, finally we made it to the only restaurant we haven't tried yet in Dallas. We always see "Salt Grass Steak" every time we go see my doctor; and every time also, we say to each other that we will eat there someday, and so we did! It is a fancy resto and that is why it is a little bit expensive than Outback Steak and TGI Friday. Jacob ordered Cheese Pizza, Matt ordered a steak with salad and mashed potato for side dish, and I mine is steak K bob with grilled shrimp, baked sweet potato, veggies, and salad. I didn't take pix of their foods because by the time I got the camera, they are already eating. Anyway, here is the photo of my food ;-)!

This looks like a lot, but not really! I didn't finish the sweet potato and Jake has also left over from his personal pizza. I'll say, the foods were good, but not as good as the TGI Friday or Outback Steak, so I don't think we will go back there again!

Our Last Dinner Out in Virginia

Before our move to Texas, we decided to eat in one of the famous restaurant in Richmond. And these are what we have eaten. Hubby and I have Steak only his has baked potato and mine has french fries. Our son got Fish Sticks and Fries, and the Shrimp plate was our appetizer :-)! The goods were good and so as the price!
