Food Trip Friday: Filipino Native Delicacies

I have been craving for these dessert for a long time now; good thing one of the Filipino restaurants in Mesquite, TX sells these foods.

Palitaw – Made also from glutinous rice and sugar, these are also cooked with sesame seeds and topped with grated coconut. They’re very soft and easy to chew and are best served cold.

Kutsinta – A brown rice cake, the kutsinta can go hand-in-hand with puto or they can be eaten all on their own (with freshly shaved coconut). They are also made from rice flour.

My Family's Favorite, Pancit Canton

I made this pancit for my son and hubby instead of pancit bihon; they like it better!

I just put some chicken liver, tofu and Chinese sausage for "sahog". It also has broccoli, snow peas, carrots, cabbage and celery.

Food Trip Friday: Deep Dark Chocolate Cake


Ingredients:
2 cups sugar
1 3/4 cups all purpose flout
3/4 cup Hershey's cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup boiling water
Butter cream frosting

Procedure:

  • Heat oven to 350 degrees. Grease pan

  • In a large mixer bowl, stir together sugar, flour, cocoa, baking powder, baking soda and salt. Add eggs, milk, oil and vanilla. beat in medium speed for 2 minutes

  • Remove from mixer, stir in boiling water (batter will be thin). Pour batter into prepared pan

  • Bake 30 to 35 minutes. Cool completely and add frosting ( optional)

Again,this cake is moist, specially on the inside - - yum! I usually make this as a snack on Sundays with mini chocolates on top and it will be good as is. But today should be the frosted version. It's only 8AM ..no rush..I will make it in the afternoon. Here's how:

Butter cream Frosting : In a small mixer beat - 6 tbsp butter or margarine, softened.
Add: 2 2/3 cups powdered sugar,1/2 cup Hershey's coca, 1/3 cup milk (alternately).

Beat well. Add 1 tsp vanilla. Add more milk if needed. And place on top of cooled cake.

Fresh Lumpia Sauce

Ingredients:
1/4 c. brown sugar
3 tbsp. cornstarch
1/4 c. soy sauce
2 tsp. ground garlic
1 c. meat broth

Procedure:
Combine sugar and cornstarch in a saucepan. Stir in soy sauce and garlic. Add broth and mix well. Cook over medium heat until mixture thickens. Serve over Fresh Lumpia.

Lumpiang Sariwa - Fresh Spring Rolls

Ingredients:
3 cups jicama julienned
1 small head of a cabbage shredded
1 medium sized carrot julienned
2 medium sized
sweet potato sliced in small chunks
1 medium tomato chopped
1 small onion sliced
3 cloves garlic minced
1/4 kilo ground pork
2 tbsp fish sauce
a few lettuce leaves
egg roll wrappers
salt and pepper to taste
1/2 cup water or shrimp stock

Procedures:
Step 1: Saute the tomato, garlic and onion in a little oil. Add in the pork and cook until brown. Season with a little bit of salt and pepper.

Step 2: Add the jicama and mix. Season with fish sauce. Pour in the water. Cover and over medium low heat for about 10 minutes or until the jicama gets a little bit wilted and tender.

Step 3: Add the sweet potatoes and carrots. Mix and cover again. Cook for about 3 minutes or until sweet potatoes are done but not mushy.

Step 4: Lastly add in the cabbage. Just mix it in and turn off the heat once it gets wilted and bright green. Your filling is done. Allow this to cool a bit and let drip over a strainer.

Step 5: Over an egg roll wrapper, lay a couple of lettuce leaves.

Step 6: Put about 2 tbsp of filling over the lettuce.

Step 7: Pull the right side of the wrapper over.

Step 8: Gently tuck the bottom side of the wrapper up pulling in the filling to tighten then roll up. Wipe a little bit of water to the top edge.

Step 9: Roll your lumpia up to seal.

Step 10: All wrapped up. Lumpiang Sariwa or Fresh Spring Rolls / Egg Rolls are best served with some hoisin sauce drizzled on top and sprinkled with crushed fresh garlic and chopped nuts!

Beef Caldereta


I have some frozen beef on the fridge, I thought I better do something about it; so I found this recipes and tried it! This my entry for this week's FTF.

INGREDIENTS
:
1 head garlic, minced
2 medium-size onions, chopped
1/2 cup cooking oil
4 lbs. beef meat, cubed then boiled until tender
water
1 cup tomato sauce
salt to taste
2 laurel leaves
2 pcs bird’s eye chili (siling labuyo)
1 red bell pepper, diced

PROCEDURES:
1. Heat oil and saute garlic, onion and goat meat until the latter is brown.
2. Add some water, tomato sauce, salt, pepper and laurel leaves. Allow to simmer for 15 minutes.
3. Add the siling labuyo to add spice. Season with salt to taste.
4. Garnish with red bell pepper before serving.

Note: This recipe serves more than six person that is why the amount of ingredients is more than the usual the amount a small family would eat/eat. So if you only want to cook small amount, just divide the ingredients into two!

On Days When I Don't Feel Like Cooking

There are days that I don't feel like cooking even though I am hungry. My husband loves me enough to buy foods for our dinner or lunch. Here is one of the take out meal he got from our favorite chicken restaurant which is similar to Wings Stop called Zaxby's that has plenty of chicken wings flavors to choose from.

Don't they look so yummy? Yup, they really are!

Erin and Jacob Inseparable!

Yesterday, we went to pick the shelf we bought somewhere in Plano. Then headed to the mall to pick our portrait at JC Penney. While there, we let Jacob play at the playplace and that's how Rinna and I met. She is a Filipina from Plano who has a four year old girl whom Jacob is fond of. We talked for at least an hour while the kids plays We got to know each other and decided to meet at her place the next day. And so we went today; the kids had the fun playing , and us eating and cooking Pinoy foods. Eversince the kids met yesterday, they wouldn't want to leave each other. I guess I need to set a playdate again this week. Erin is a very cute, smart and tough little girl! We adore her so much! Jake right now wants to talk with her on the phone. I need to finish this post and dial her number :-)!
