Mexican Foods for Dinner

My husband and I made Mexican foods for our dinner today. He made Chicken Enchilada and I made Mexican Rice.

INGREDIENTS:

* 1 1/2 teaspoons vegetable oil
* 1/2 small small onion, diced
* 2/3 cup uncooked long-grain rice
* 1/2 teaspoon ground cumin

* 1/2 teaspoon chili powder
* 3 ounces canned diced tomatoes
* 1 teaspoon salt
* 1 1/2 cups water
* 1/2 cup of sliced green bell pepper

DIRECTIONS:
1. In a large saucepan, heat oil over medium heat. Stir in onion and saute until translucent.
2. Pour the rice into the pan and stir to coat grains with oil. Mix in cumin, chili powder, tomatoes, salt and water. Cover, bring to a boil then reduce heat to low. Cook at a simmer for 20 to 30 minutes or until rice is tender. Stir occasionally.

They both turned out to be good considering I didn't measure the ingredients, I just "eyeballed" it as Rachael Ray said. Hubby on the other hand doesn't follow the directions and put some ingredients you wouldn't think to be in there.

    My sister taught me how to make that enchilada,but like i said im just a good eater lol. The enchilada with rice really look delish. I wonder what did you add in your mexican rice.

  2. Wow! I love mexican rice Te Ces and enchilada too. I first taste this rice in Pollo Loco and it taste best and I will try to make this recipe of yours Ate, am sure this taste so delicious especially when it's from yours. Yummm!
