Food Trip Friday: Deep Dark Chocolate Cake

2 cups sugar
1 3/4 cups all purpose flout
3/4 cup Hershey's cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup boiling water
Butter cream frosting

  • Heat oven to 350 degrees. Grease pan

  • In a large mixer bowl, stir together sugar, flour, cocoa, baking powder, baking soda and salt. Add eggs, milk, oil and vanilla. beat in medium speed for 2 minutes

  • Remove from mixer, stir in boiling water (batter will be thin). Pour batter into prepared pan

  • Bake 30 to 35 minutes. Cool completely and add frosting ( optional)

Again, this cake is moist, specially on the inside - - yum! I usually make this as a snack on Sundays with mini chocolates on top and it will be good as is. But today should be the frosted version. It's only 8AM rush..I will make it in the afternoon. Here's how:

Butter cream Frosting : In a small mixer beat - 6 tbsp butter or margarine, softened.
Add: 2 2/3 cups powdered sugar,1/2 cup Hershey's coca, 1/3 cup milk (alternately).

Beat well. Add 1 tsp vanilla. Add more milk if needed. And place on top of cooled cake.
