We are trying to eat a vegetarian diet just because it is healthier. I started substituting tofu in lieu of meat for protein. I am also using less meat by replacing bacon for flavor....and hopefully would be completely meatless meal eventually. So, I cooked "Pinakbet" with a little bacon. We also had fried tofu for our dinner tonight; am glad that my son eats this dish :-). Anyway, sharing our meal for FTF this week.
My version of pinakbet consists of bacon, bagoong, radish, sweet potatoes, okra, bitter gourd or ampalaya, eggplant, and long beans or sitaw. I sauteed these veggies on bacon's oil, with garlic onion and tomatoes. Oh man, it reminds me of my Mom's cooking where she puts sweet potato or kamote instead of squash or kalabasa.
I haven't tried cooking pinakbet with kamote. I should try doing that one of these days. Happy FTF, and thanks for the visit!

is bacon not too salty,specially with bagoong? try to use bacon bits if all you wan is flavor. :)

ReplyDeletei always prefer meal na malasa like diningding, pakbet or any food basta me bagoong.. natakam na naman ako.. but just like you, i'm slowly taking out the meat in our meal. I also use mushroom instead of beef..
ReplyDeleteWilla, it isn't salty at all especially if you don't put a lot of bagoong in it :-)...i tried the bacon tibits and it saltier than the uncooked bacon.
