Chicken Macaroni Salad Filipino Style

Chicken Macaroni Salad Ingredients:

  • 1/5 kilo macaroni noodles
  • 2 to 3 pieces, medium sized carrots
  • 1 big chicken breast
  • 500 ml of mayonnaise
  • 1 can (836 g) pineapple chunks or tidbits
  • 1 big white onion, finely chopped
  • 1/2 cup sweet pickle relish
  • 3 hardboiled eggs, diced
  • 1 cup diced cheddar cheese
  • 1/2 cup raisins
  • salt and pepper to taste

Macaroni Salad Cooking Instructions:

  • Cook macaroni noodles according to package cooking instructions.
  • In a pot, boil carrots in water for 15 to 20 minutes or until cooked.
  • Drain carrots and let cool. Peal skin then dice.
  • Boil chicken breast in water with salt. Drain chicken breast, then shred in 1 inch lengths
  • Drain pineapple chunks or tidbits.
  • Combine all ingredients while adding salt and pepper, to taste.
  • Refrigerate, then serve.

Food Trip Friday: Green Salad with Chick Peas


We fell in love with this salad after we tried their sample at Costco two weeks ago. And so, I bought the four ingredients right away because my son kept telling us how much he likes it. If you want to try this, the first two ingredients can be purchased at Costco.

Chicken Macaroni Salad, Anyone?

This is one of the Filipino dish that Matt and I couldn't resists; and so I decided to make some after tasting some made by our friends two weeks ago. And here is the picture of "Chicken Macaroni Salad." My husband loves it so much that he even took some for his lunch.

Chicken Macaroni Salad Filipino Style

This is one of our favorite Filipino salad, and hubby get addicted to it every time I make some. He even take it to work for lunch as well as fruit salad Pinoy style :-). Can't wait till my son is ready enough to taste it! Anyway, here is the recipe I found online; it's different from the one I make, but the ingredients are pretty much the same except that I put some celery on mine.

Ingredients:
1 box macaroni noodles
2-3 big chicken breast
mayonnaise
1 can pineapple chunks or tidbits
1 onion
1/2 cup sweet pickle relish
1 cup shredded cheddar cheese
1/2 cup raisins
2 to 3 medium sized carrots(optional)
salt
pepper

Directions:
Boil chicken breast in water with salt and pepper until it's tender. Drain chicken and shred it in 1 inch length.
Peal skin and boil carrots in water for 15-20 minutes or until cooked. Drain carrots and let it cool. (OPTIONAL)
Cook macaroni noodles according to package cooking instructions. Make sure it's el dente. Drain and cool.
Drain pineapple chunks or tidbits.
Finely chop onions
Combine the macaroni, shredded chicken, pineapple, sweet pickle relish, raisins, shredded cheese, carrots, and slowly add the mayonaisse while mixing all ingredients. (you can put more or less mayo in your salad, all up to you)
Add salt and pepper to taste.Refrigerate, then serve.
