Kid Makes & Bakes: Italian Egg "Wave"

Hey Moms, does this happen in your home a couple of days before Mother's Day? You'll round a corner to find the kids, and, possibly Dad or another grown-up, huddled and speaking in hushed tones. They see you and scramble!


Point the big people in your home to this blog and let them know about my "Kid Makes & Bakes" recipes.

The kids will need a lift to the grocery store, and maybe a little help in the kitchen, but most of these recipes can be made entirely by their little hands just for you!

Cooked in the microwave, this kid-friendly recipe is a great idea for a
mother's day breakfast.

Kid Makes and Bakes: Italian Egg Wave
Ingredients:
  • 1 Teaspoon margarine
  • 2 eggs
  • 1/4 Cup shredded mozzerella cheese
  • 2 tablespoons of quartered artichokes (from a can that a grown-up opens)
  • 2 tablespoons of diced tomatoes (from a can that a grown-up opens)
  • shakers with salt and pepper
Steps:
  • Use a paper towel to smear the margarine inside a nice soup bowl that can go into the microwave.
  • Crack the eggs and put the gooey stuff inside into the soup bowl. Ask a grown-up for help if this is too hard to do. Throw the empty eggshells in the garbage and wipe off your hands if egg gets on them.
  • Use a fork to stir the eggs in the bowl as fast as you can to whip them.
  • Put the mozzerella cheese, artichokes, and tomatoes in the eggs. Sprinkle a little salt and pepper in the eggs and stir it all up.
  • Set the microwave for 45 seconds and push start. Then, open the door and see if the eggs look dry. If they look wet, set the microwave for 30 seconds more and push start. When the eggs look dry, they are cooked.
  • Wait until the bowl cools off before touching it, then take it out of the microwave.
  • Put the bowl on a nice dinner plate and serve it to mom with a fork.

Riding a roller coaster is one of my favorite things to do when I go to Amusement park. I love the thrill of riding it and the fun as well. The last time we went to Seaworld, Texas was two years ago before moving here in Virginia. And I can't believe how much amusement park changed. I never been to Seaworld Florida; and since my cousin lives closed to Orlando, we decided to spend our summer vacation in there. I can't wait to ride the new and crazy ride they have in there called the Manta. WOMAN'S YEARLY EXAM

I went to the doctor for my yearly physical. The nurse starts with certain basics.

"How much do you weigh?" she asks. I say, "135."

The nurse puts me on the scale. It turns out my weight is 180.

The nurse asks, "Your height?" I answer, "5 feet x 4 inches."

The nurse checks and sees that I only measure 5 feet 2 inches.

She then takes my blood pressure and tells me that it's very high.

"Of course it's high!" I scream.” When I came in here I was tall and slender! Now I'm short and fat!"

She put me on Prozac.

Restaurant - Style Potato Salad


This is a traditional and easy to make potato salad. So if you like potato salad, try this one out.

Ingredients:

  • 2 pounds russet potatoes
  • 1 cup mayonnaise
  • 4 teaspoons sweet pickle relish
  • 4 teaspoons white sugar
  • 2 teaspoons chopped white onion
  • 2 teaspoons prepared mustard
  • 1 teaspoon white wine vinegar
  • 1 tablespoon minced celery
  • 1 teaspoon minced pimento
  • 1/2 teaspoon shredded carrot
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon ground black pepper
  • salt to taste

Directions:

  1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
  2. In a large bowl, combine the potatoes, mayonnaise, sweet pickle relish, sugar, onion, mustard, vinegar, celery, pimentos, carrot, parsley, pepper and salt. Mix well, chill and serve.

No Insulin for Mommy, Daddy!

I have started using insulin for my diabetes last week. The other night, it was funny because it was the first time Jacob seen Daddy injecting insulin on me. Well, I am still scared doing it myself...that is why Matt is doing it to me. Anyway, back to Jacob, when he saw the tiny needle and Daddy was about to stick it on my arm, he started yelling and screaming like "no, daddy no! don't do that!" while crying. It was funny, he feels for me I think because he knows how it feels like. From then on, we decided not do it when he is present.

Spring Gardening

Here's a list of helpful chores to jumpstart your plants for beautiful blooming this season.

Clean and Sharpen Tools: If you didn't do this during the winter, do it now. Clean, sharpened, and dry tools will prevent you from doing extra work. Three-sided bevel files work well for sharpening, as does steel wool (for smoothing).


Deadheading: Get rid of spent flowers from bulbs, but be sure to leave the rest of the plant for now.


Pruning: Prune early-blooming shrubs such as viburnum and forsythia as soon as their blooms have passed.


Prepare Soil: Remember to fertilize and mulch your borders and beds. You should also consider fertilizing any fruit trees. Get rid of winter debris in your beds and remove heavy winter mulch if you applied it last season. Before you plant, break down soil at a level surface and cover the soil (with black plastic sheeting or similar) to warm the soil before planting.


Lawn Care: This is an ideal time to start a new lawn from seed. If you already have a lawn, start mowing now, but don't cut the grass too short for the first couple of times.


Have Fun!: Browse through seed and gardening catalogs to figure out what you want in this year's garden. For a sunny flower plot, you might try combining the Orange Sun Coleus, Million Bells Terra Cotta Yellow, and Red Verbena flowering plants (visit wilsonbrosnursery.com for more ideas). Or you can turn your regular flower bed into a summer fruit and vegetable bed. Some of the most successful fruits, vegetables, and herbs for beginners include strawberries, carrots, peppers, zucchini, basil, and rosemary.

Mental Blocked

While visiting other blogs, I can not help but notice that some bloggers are running out of things to talk about. I thought it was just me! But I was wrong. I tell you, since I got here from my trip to the Philippines, I couldn't think of things to say or post on my blogs. Some of you might have notice that all I've got lately were paid post entries instead of personal one. My mind is officially BLOCKED! Bourbon-Spiked Sweet Potato Puree

Rich in nutrients, velvety smooth in texture and sweet on the tongue, the sweet potato is particularly complemented by spicy or sweet southern-style recipes. Pureed, mashed, in a casserole or spice-rubbed, try one of these warming, hospitable dishes for your next gathering.

RECIPE INGREDIENTS:
5 pounds medium unpeeled sweet potatoes or yams
1 tablespoon fresh lemon juice
1/2 teaspoon finely grated lemon zest
salt and freshly ground pepper
1/4 cup good-quality bourbon
1/4 cup dark brown sugar

DIRECTIONS:
Preheat the oven to 450 degrees F. Pierce the sweet potatoes a few times and roast them in a large nonstick roasting pan for about 1 hour, or until soft and browned on the bottom. Let cool for 15 minutes. Remove the skin, leaving as much caramelized flesh as possible. Cut the potatoes into large chunks and transfer to a food processor. Add the lemon juice and zest, season with salt and pepper and process until smooth.

In a large nonreactive saucepan, combine the bourbon and brown sugar and bring just to a boil. Add the sweet potatoes and stir until blended.

Make ahead:

The puree can be refrigerated for up to 1 day. Warm the sweet potato puree over low heat, then transfer to a large bowl and serve.

Raisin Cookies


Do you love cookies? If so, then this recipe will surely be the winner in your home. Try this melt in your mouth cookies and tell me if you didn't like it at all!



  • 1 cup water
  • 1 cup butter or margarine
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 3 1/2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup nuts, chopped
  • Granulated sugar

In a small saucepan over medium heat, boil raisins and water until the water evaporates (check often so pan doesn't become dry, burning the raisins). Remove from heat and set aside.

In a large mixing bowl, cream together butter or margarine and sugar. Add eggs and vanilla, and mix well. Stir in raisins. Stir or sift together flour, salt, baking soda, and cinnamon; add to creamed mixture. Stir in nuts and mix well. Form dough into balls the size of a walnut, roll in sugar, and place on greased cookie sheet. Bake at 375 degrees for 10 to 12 minutes. Makes 2 dozen cookies.

Baked Chicken with Lemon and Dill

This dish is one of my husband's favorite. So, I made sure I make it at least once a week or I will be in trouble (just kidding):-)! It is easy to make and we all love it!

I serve it with corn on the cob, lima beans and cole slaw.

If you guys want to recipes for this dish, just don't hesitate to ask me; I would be very willing to share it with you!

Guys, the only thing I did with the chicken was washed it, patted it dry. Then I sprinkled some salt, pepper and dill inside and outside of the chicken. Then, finally put some lemon or lime juice on top of the chicken. And then baked it in a pre heated oven to 350% for 45 minutes. The chicken is done once the juice is clear and the skin is brown just like in the picture. You can use the the juice as a sauce, if you like :-)!

Family Etiquette Dinner

Many people bemoan the state of manners these days, saying that etiquette is a lost art. But it doesn’t have to be!

Plan a nice, sit-down dinner for your family and make sure everyone participates in the preparation; include rolls, salad, appetizers, a main course, and dessert. Set the table with nice plates, glasses, and silverware if you have them (food dishes are set to the left of a setting; glasses to the right), and instruct your children in common eating etiquette. Some things may seem basic, but remember: your kids probably don't know them! Some habits include:

1. Work from the outside in with your silverware; the shorter forks are for salads and appetizers, the longer for the main dish. Utensils shouldn't touch the table after use.


2. Place butter and a roll on your individual plate. Break off bite-sized pieces of the roll and butter them individually; don't butter the whole roll at one time.


3. Ask for things to be passed to you if you can't reach; stretching over the table is considered bad etiquette.


4. If you get a bad bite of something (such as gristle from meat or an undetected garlic clove), put the napkin to your mouth and discreetly spit it into the napkin. Don't forget it's there!


5. Leaving some food leftover is acceptable, but you shouldn't make your plate look like you licked it clean!


6. If you have to leave during the meal, place your napkin on your chair to signify you will be returning. When finished with the meal, place the napkin folded on the place setting; put your knife and fork together and set to about 4 o'clock on your plate.

You might think some of these traditions are silly, but at the very least your etiquette night will be a fun, cultural experience your family can enjoy together. Your children can also thank you in the future when they know how to behave in circumstances where etiquette is expected!

Be gone for 2 Weeks..

Hello Friends! I will be away for two weeks starting tomorrow. My grandmother died this morning. So my cousin and I decided to go home pay our last respect to her. I will just talk to you when I get back. Will be missing you all, too and the blogging! Take care you all!
